A lot of quality work happens before green coffee ever leaves the estate: careful picking, patient drying, tight sorting. But a surprising amount of that work can quietly unravel in the weeks between the mill and your roastery. Coffee is hygroscopic and biologically active, and an ocean container is not a neutral space to park it. For roasters and importers in Europe and the Americas sourcing from India, protecting quality in transit and storage is not a footnote to buying well — it is part of buying well.
Here is a practical view of what puts green coffee at risk on the journey, and what you can control at each stage.
Why green coffee degrades in the first place
Green coffee is a living seed, and it keeps respiring after processing. Two numbers matter more than most: moisture content and water activity. Moisture content tells you how much water is in the bean; water activity tells you how much of that water is chemically "available" to drive spoilage. Specialty coffee is generally shipped in a moisture band that is dry enough to be stable but not so dry that it tastes flat and bakes unevenly, with water activity kept comfortably below the threshold where mold and microbial activity accelerate.
The problem is that these values are not fixed. Beans exchange moisture with the air around them until they reach equilibrium. Warm, humid air pushes water into the bean; dry air pulls it out. Heat speeds every chemical reaction involved in staling, fading acidity, muting aromatics, and shifting a bright, sweet lot toward a papery, woody baseline. Degradation is rarely a single dramatic event. It is usually the slow, compounding result of a coffee sitting in conditions it should not have been in.
Packaging choices: jute, GrainPro, and hermetic liners
Packaging is your first and cheapest line of defense, and the choice is really about how much you want to isolate the bean from the surrounding air.
- Jute or sisal bags alone are breathable and traditional, but breathable is exactly the problem on a humid voyage — the coffee tracks whatever the container's air is doing.
- GrainPro or similar barrier liners inside a jute bag add a high-barrier plastic layer that dramatically slows moisture and oxygen exchange, helping the coffee hold its moisture, water activity, and aromatics.

The ocean voyage: container humidity, "container rain," and heat
The transit stage is where good coffee is most often damaged, because it sits unattended in conditions you cannot monitor in real time.
The core enemy is condensation. As a container crosses climate and temperature zones, the air inside cools at night and warms by day. When warm, moist air meets a cooler steel surface, water condenses — often on the ceiling and walls — and drips back down onto the cargo. Dockworkers and shippers call it container rain, and it can soak the top layers of a stack, leaving water stains, localized mold, and off-flavors that no roast can fix.
Several factors compound the risk:
- Loading humidity. Coffee and dunnage loaded in a humid port bring moisture into the sealed box with them.
- Transit time and route. Voyages from India to Europe and the Americas are long enough for repeated heat-and-cool cycles to matter, and passing through hot zones raises peak temperatures inside the box.
- Positioning. A container stacked in direct sun on deck runs hotter than one below.
Mitigations are well established: shipping in barrier liners, using desiccant and kraft-paper container liners to absorb and buffer moisture, keeping cargo off the floor and walls with proper dunnage, and avoiding loading during heavy rain. None of these are exotic — but they need to be specified and verified, not assumed.
What to check the moment coffee arrives
Arrival is your audit point. Treat it as one before the pallets disappear into the racking.
- Inspect the container as it opens: look for water marks on the ceiling, damp dunnage, a musty smell, or visible condensation.
- Check the bags for staining, tears in liners, and any mold or clumping, paying attention to the top and outer layers where condensation lands first.
- Sample and measure. Pull representative samples and test moisture content and water activity against the values agreed at shipment. Drift outside the expected band is an early warning even when the coffee looks fine.
- Smell and cup. A quick sensory pass catches ferment, mustiness, or bagginess that instruments can miss.
- Document everything with photos and readings, so any claim is grounded in evidence rather than memory.
Catching a problem here, rather than three months into storage, is the difference between a manageable conversation and a written-off lot.
Storing green coffee well once it lands
Green coffee is stable but not immortal, and your warehouse either extends its life or quietly shortens it. The principles are simple and consistent: keep it cool, dry, dark, and stable.
Aim for a controlled, moderate temperature and a moderate relative humidity — enough to keep the bean near its equilibrium without pulling moisture in or driving it out. Avoid swings; cycling conditions are harder on coffee than a steady, slightly-less-than-ideal climate. Keep pallets off concrete floors and clear of exterior walls, rotate stock first-in, first-out, and keep coffee away from anything with a strong odor, since green beans readily absorb ambient smells. Under good conditions a well-packed lot holds its character for many months; under poor conditions the same coffee can fade noticeably in weeks.
